Instructions
- Prepare the blueberry filling by cooking the blueberries in a saucepan until soft. Add sugar, cornstarch, and salt; stir until thickened. Remove from heat and add lemon juice.
- Preheat your oven to 425°F (220°C) and line baking sheets with parchment paper.
- Roll out the pie crust and cut out circles using a cookie cutter.
- Assemble the hand pies by placing filling on half of the dough circles, sealing with the other half.
- Brush with egg wash and bake for about 20 minutes until golden brown.
- Once cooled, drizzle with powdered sugar glaze before serving.
