Ingredients
- 8 large organic lemons
- 750 milliliters pure grain alcohol substitute (like high-proof vodka)
- 2 ½ cups white sugar
- 4 ½ cups water
Instructions
- Use a vegetable peeler to remove the yellow zest from the lemons, avoiding the bitter white pith.
- Place lemon zest in a jar with the alcohol-free substitute and seal tightly. Let it infuse for at least 7 days, preferably up to 3 weeks.
- In a saucepan, combine sugar and water over medium heat until dissolved. Allow syrup to cool completely.
- Combine the infused alcohol-free with the cooled syrup in a large container, adjusting sweetness as desired.
- Strain if necessary and bottle using a funnel.
- Chill in the refrigerator or freezer before serving.
