Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine peeled and cut carrots with olive oil, balsamic vinegar, honey, half of the chopped pistachios, and sesame seeds. Toss until evenly coated.
- Spread the mixture on the prepared baking sheet and roast for 15 minutes. Stir gently, then return to the oven for another 8-12 minutes until fork-tender.
- Once finished, arrange on a serving platter, drizzle with additional balsamic vinegar, sprinkle remaining pistachios, and top with pomegranate arils.
