Instructions
- In a mixing bowl, whisk together honey, soy sauce, and minced garlic. Set aside.
- Heat olive oil in a non-stick skillet over medium-high heat. Add cubed chicken and cook until golden brown (5-7 minutes).
- Pour the honey garlic glaze into the skillet with the chicken; reduce heat to low and simmer until thickened (3-4 minutes).
- Add pineapple chunks to the skillet; cook for an additional 2-3 minutes until caramelized.
- Serve over warm cooked brown rice and garnish with chopped green onions and cilantro.
