Instructions
- Slice zucchinis into uniform pieces using a mandoline slicer or knife.
- Mix the low-sugar vinaigrette, garlic powder, and optional herbs in a bowl.
- Marinate the zucchini slices in a Ziploc bag with the marinade for at least 4 hours.
- Preheat your grill to medium-high heat (about 375°F).
- Drain excess marinade from the zucchini and place slices on the grill.
- Grill for 3-4 minutes per side until tender and charred, about 10-12 minutes total.
- Season with salt and pepper before serving, garnishing with fresh parsley if desired.
