Instructions
- Cut chicken into bite-sized pieces and mince the garlic.
- In a large skillet over medium heat, heat olive oil. Add chicken, season with salt and pepper, and cook until golden brown (6-8 minutes).
- Stir in minced garlic; cook for an additional minute until fragrant.
- Add chicken broth; bring to a gentle boil. Stir in orzo pasta, reduce heat to low, cover, and simmer for 10-12 minutes until al dente.
- Remove from heat; mix in Boursin cheese until melted and creamy. Fold in fresh spinach until wilted.
- Serve immediately, garnished with fresh herbs if desired.
