- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 3/4 cup unsalted butter, softened
- 1 large egg
- 2 tsp vanilla extract
- 8 oz cream cheese, softened
- 1 cup fresh strawberries, chopped
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the softened butter and sugar together until light and fluffy. Add the egg and vanilla extract, mixing well.
- In another bowl, whisk together flour and baking soda. Gradually add this dry mixture to the wet ingredients until just combined.
- In a separate bowl, mix cream cheese with chopped strawberries until smooth. Optionally add sugar to taste.
- Scoop about 2 tablespoons of dough, flatten it in your palm, place 1 tablespoon of filling in the center, then fold dough around it and seal.
- Place stuffed balls on the prepared baking sheet and bake for 12-15 minutes until golden on edges but soft in center.
