Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a stand mixer or using a hand mixer, cream together the unsalted butter, white sugar, and light brown sugar until light and fluffy (about 2 minutes).
- Add the egg, egg yolk, and vanilla extract; beat until well combined (approximately 1 minute).
- Gradually add the all-purpose flour, baking powder, baking soda, kosher salt, and cocoa powder; mix on low speed until just combined.
- Gently fold in the white chocolate chips.
- Scoop about two tablespoons of dough onto the prepared baking sheets, spacing them about two inches apart.
- Bake for 10-11 minutes until slightly underbaked for that fudgy center. Allow to cool slightly before serving.
