- 2 cups mashed potatoes (homemade or store-bought)
- 1 cup shredded cheese (mixed cheddar and mozzarella)
- 2 tablespoons chopped green onions
- 1/4 cup all-purpose flour
- 1 cup breadcrumbs (plain or seasoned)
Instructions
- In a bowl, combine cold mashed potatoes, shredded cheese, and chopped green onions until well mixed. If too wet, gradually add flour until the mixture holds together.
- Scoop about two tablespoons of the mixture and roll it into balls. Place on a plate.
- Set up a breading station with flour in one bowl and breadcrumbs in another. Roll each ball in flour, then coat with breadcrumbs.
- Preheat the air fryer to 375°F (190°C).
- Lightly spray the air fryer basket with nonstick spray and arrange the balls in a single layer. Air fry for 10-12 minutes until golden brown and crispy.
- Let cool slightly before serving with your favorite dipping sauce.
