- 4 salmon fillets (6 oz each)
- 2 ripe peaches, sliced
- 2 tbsp honey
- 2 tbsp olive oil
- 2 tsp fresh thyme, chopped
- 1/4 cup low-sodium chicken broth
Instructions
- Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
- Slice the peaches into wedges and set aside.
- In a bowl, mix honey, chicken broth, and olive oil with fresh thyme until combined.
- Place salmon fillets skin-side down in the baking dish and pour the peach glaze over them. Arrange peach slices around the salmon.
- Roast in the oven for 15-20 minutes until the salmon flakes easily with a fork.
- Serve immediately, drizzling any remaining glaze over the top.
