- 1 ½ cups graham cracker crumbs

- 24 oz cream cheese, softened
- 1 cup granulated sugar (for filling)
- 2 tbsp fresh lemon juice
- 2 tsp pure vanilla extract
- 4 large eggs, room temperature
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and ⅓ cup sugar. Press mixture into the bottom of a greased springform pan.
- In another bowl, beat cream cheese until smooth. Gradually add in the remaining sugar until well combined.
- Mix in lemon juice and vanilla extract until blended. Add eggs one at a time on low speed to avoid overmixing.
- Pour the filling over the crust and bake for 50-60 minutes until slightly jiggly in the center.
- Allow to cool in the oven with the door cracked for about an hour before chilling in the fridge for at least four hours or overnight.
