Instructions
- Preheat the oven to 350°F (175°C). Spray a baking dish with nonstick cooking spray.
- Spread the quartered English muffins evenly across the bottom of the baking dish.
- In a bowl, whisk together eggs, milk, salt, and pepper until combined.
- Stir in chopped spinach and half of the shredded cheese; pour the mixture over the English muffins.
- Bake for 30–35 minutes until set and lightly golden on top.
- Drizzle with hollandaise sauce before serving.
