- 4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 6 tbsp unsalted butter
- ¼ cup freshly squeezed lemon juice
- 1 cup grated Parmesan cheese
- 8 oz linguine or spaghetti
- Salt and pepper to taste
Instructions
- 1. Season chicken breasts with salt and pepper. Heat 2 tablespoons of butter in a skillet over medium heat until melted.
- 2. Add chicken to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F). Remove from skillet and set aside.
- 3. In the same skillet, add minced garlic and sauté for about one minute until fragrant. Stir in the remaining butter and lemon juice until bubbling.
- 4. Cook pasta according to package instructions until al dente; reserve ½ cup pasta water before draining.
- 5. Return chicken to the skillet along with drained pasta. Toss together, adding reserved pasta water as needed for consistency. Mix in Parmesan cheese until melted.
- 6. Serve hot, garnished with additional cheese or herbs if desired.
