- 1/2 cup panko breadcrumbs
- Salt and pepper to taste
Instructions
- Rinse and pat dry the chicken breasts, then chop into smaller chunks.
- In a large bowl, combine garlic, feta, parsley, lemon juice, olive oil, panko breadcrumbs, salt, and pepper until well mixed.
- Add chopped chicken to the mixture and blend thoroughly by hand or using a food processor.
- Shape the mixture into six patties about one inch thick.
- Preheat your grill to medium-high heat (375°F) and brush grates with olive oil.
- Grill each patty for approximately 5 minutes per side until they reach an internal temperature of 165°F.
- Serve on toasted buns or lettuce wraps with your choice of toppings.
