Instructions
- In a mixing bowl, combine powdered sugar, softened butter, peppermint extract, and heavy cream until a smooth dough forms.
- Shape the dough into small discs and place them on a parchment-lined baking sheet. Freeze for 20 minutes to set.
- While the filling is chilling, melt the chocolate in a microwave-safe bowl or double boiler until smooth. Stir in vegetable oil if desired for a smoother coating.
- Dip each chilled disc into the melted chocolate, allowing excess to drip off before returning them to the baking sheet.
- Optionally, decorate with festive sprinkles or crushed candy canes before chilling until the chocolate is fully set.
