- 2 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1/2 cup non-dairy butter (melted)
- 2 large eggs (or 2 tbsp flaxseed meal + 6 tbsp water)
- 1 cup raisins
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
- In a large bowl, whisk together oats, flour, baking soda, brown sugar, and granulated sugar until combined.
- In another bowl, mix melted non-dairy butter with eggs (or flaxseed mixture) until smooth.
- Pour wet ingredients into dry ingredients and stir until just combined. Gently fold in raisins.
- Spread the mixture evenly in the prepared baking dish and bake for 25–30 minutes or until golden brown around the edges.
- Allow cooling completely in the pan before slicing into bars.
