- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup creamy or crunchy peanut butter
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a large bowl, cream softened butter with granulated and brown sugars until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Drop half of the cookie dough onto one side of each prepared sheet; add dollops of peanut butter on top. Spoon remaining dough over peanut butter and swirl gently with a knife.
- Bake for 10-12 minutes until edges are set but centers remain soft. Allow to cool slightly before serving.
