- 4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 1 tbsp fresh ginger, grated
- 3 cups cooked rice (white or brown)
- 1/4 cup chopped green onions
Instructions
- Dice the chicken into bite-sized pieces; mince the garlic and ginger.
- In a bowl, mix soy sauce, brown sugar, garlic, and ginger until combined.
- Marinate the chicken in the sauce for at least 15 minutes.
- Heat oil in a nonstick skillet over medium-high heat; cook marinated chicken for 7-10 minutes until golden brown.
- Add remaining marinade to the pan and simmer until thickened.
- Serve teriyaki chicken over rice and garnish with green onions.
