Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix applesauce and softened plant-based butter until smooth.
- Gradually combine wet and dry mixtures until just combined; avoid over-mixing.
- Gently fold in chopped apples until evenly distributed.
- Scoop tablespoon-sized portions onto prepared baking sheets, spacing them two inches apart.
- Bake for 12-15 minutes until golden around the edges but soft in the center. Let cool slightly before serving.
