- 1 lb fresh salmon fillets, cut into 1-inch cubes
- 1/2 cup all-purpose flour
- 1 cup panko breadcrumbs
- 2 large eggs, whisked

- 1/4 cup mayonnaise
- 2 tbsp sriracha (adjust for spice preference)
- 1 tbsp honey
- Juice of 1 lime
- Salt and pepper to taste
- 1 tsp garlic powder
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Season salmon cubes with salt, pepper, and garlic powder.
- Set up three bowls: one with flour, one with whisked eggs, and one with panko mixed with salt and pepper.
- Dredge each salmon piece in flour, dip into egg, and coat with panko breadcrumbs.
- Place coated salmon on the baking sheet, drizzle lightly with olive oil, and bake for 12-15 minutes until golden brown.
- While baking, mix mayonnaise, sriracha, honey, and lime juice in a bowl for the dipping sauce.
- Serve warm with sauce drizzled on top.
