- 2 extra large tomatoes, finely diced
- 1 English cucumber, finely diced
- 1 cup red onion, finely chopped
- 1 red bell pepper, finely diced
- 1 yellow bell pepper, finely diced
- 1 cup fresh herbs (parsley, mint, or cilantro)
- Zest and juice of 1 lemon
- 4 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Chop the tomatoes, cucumber, red onion, and bell peppers into very small pieces for optimal flavor blending.
- In a large mixing bowl, combine all the chopped vegetables with lemon zest and olive oil.
- Squeeze in the lemon juice and season with salt and pepper to taste.
- Toss gently until well combined. Let rest for 10 minutes to allow flavors to meld.
