- 5–6 pieces boneless chicken breast or 6–8 pieces boneless chicken thighs
- 1/3 cup soy sauce
- 1/4 cup + 2 tbsp brown sugar
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 6–7 wooden skewers (soaked in water)
Instructions
- Soak wooden skewers in water for 10–20 minutes to prevent burning.
- In a mixing bowl, combine soy sauce, red apple vinegar or mirin, and brown sugar until dissolved.
- Cut chicken into 1–2 inch chunks and marinate with garlic, ginger, and some marinade for at least 10 minutes.
- In a saucepan, thicken the remaining marinade over medium heat using a cornstarch slurry.
- Thread marinated chicken onto soaked skewers and grill over medium-high heat for about 8–12 minutes, basting occasionally with the thickened sauce.
