- 8 cups spinach or spinach-arugula mix
- 2 large kiwis, peeled and sliced
- 2 snack cucumbers, thinly sliced
- 1 cup fresh blackberries
- ⅓ cup crumbled goat cheese
- ½ cup candied pecans (or regular pecans)
- ½ cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons granulated sugar
- 1 tablespoon poppyseeds
- 1 tablespoon finely minced white or yellow onion
Instructions
- Wash and dry spinach thoroughly. Peel and slice kiwis; thinly slice cucumbers.
- For optional candied pecans, combine pecans, sugar, and water in a skillet over medium heat until coated.
- Whisk together dressing ingredients until smooth; let sit for 10 minutes.
- In a large bowl or platter, layer spinach, kiwis, cucumbers, blackberries, red onion (if using), goat cheese, and cooled pecans.
- Drizzle dressing over the salad just before serving.
