Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together all-purpose flour, cake flour, corn starch, baking powder, baking soda, and salt.
- Cream cubed butter in a stand mixer until smooth; gradually add sugars and mix until fluffy.
- Add one egg and one yolk; blend well. Slowly incorporate dry ingredients and fold in chocolate chips.
- Shape dough into approximately six cookies (5.7 oz each) on a parchment-lined baking sheet.
- Bake for 10-12 minutes until golden brown, then cool on the sheet for 15-30 minutes before transferring to a cooling rack.
