- 4 medium zucchini
- 15 oz ricotta cheese
- 1 large egg
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese

Instructions
- Preheat oven to 400°F (200°C).
- Slice zucchini lengthwise into ¼-inch strips and season with olive oil, garlic powder, oregano, salt, and pepper. Roast for 15-20 minutes.
- In a bowl, combine ricotta cheese, egg, herbs, lemon zest, garlic, salt, pepper, and Parmesan until smooth.
- In a baking dish, layer half the zucchini strips followed by half the ricotta mixture, half the marinara sauce, and half the mozzarella cheese. Repeat the layers.
- Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake until bubbly and golden brown.
