  • 1 cup rolled oats
  • 1/4 cup all-purpose flour or whole wheat pastry flour
  • 4 large eggs
  • 1/2 cup honey
  • 1 tablespoon lemon zest
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together unsalted butter and granulated sugar until smooth. Add rolled oats and flour; mix until crumbly. Press into the bottom of a 9×9-inch baking dish.
  3. Bake the base for 15 minutes or until lightly golden.
  4. While the base bakes, whisk eggs, honey, lemon zest, lemon juice, and additional flour in another bowl until smooth.
  5. Pour the lemon filling over the baked base once it cools slightly.
  6. Return to the oven and bake for an additional 20-25 minutes or until set in the center.
  7. Allow to cool completely before slicing into squares.
