Ingredients
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1 cup rolled oats
- 1/4 cup all-purpose flour or whole wheat pastry flour
- 4 large eggs
- 1/2 cup honey
- 1 tablespoon lemon zest
- 1/2 cup freshly squeezed lemon juice
- 1/4 cup all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together unsalted butter and granulated sugar until smooth. Add rolled oats and flour; mix until crumbly. Press into the bottom of a 9×9-inch baking dish.
- Bake the base for 15 minutes or until lightly golden.
- While the base bakes, whisk eggs, honey, lemon zest, lemon juice, and additional flour in another bowl until smooth.
- Pour the lemon filling over the baked base once it cools slightly.
- Return to the oven and bake for an additional 20-25 minutes or until set in the center.
- Allow to cool completely before slicing into squares.
