- 8 medium-large organic lemons
- 4 cups high-proof non-alcohol substitute (fruit juice or vinegar)
- 4¾ cups water
- 2.43 lbs white sugar
Instructions
- Wash lemons thoroughly and peel only the yellow zest using a vegetable peeler.
- Place lemon peels in a glass jar and cover with your chosen non-alcohol substitute. Seal tightly and let infuse in a dark place for 25 days.
- Strain the infused mixture through a fine mesh strainer into a bowl.
- In a pot, heat water until just below boiling, then stir in sugar until fully dissolved.
- Allow syrup to cool slightly before combining with the lemon infusion while stirring continuously.
- Bottle the limoncello using a funnel once cooled to room temperature and refrigerate for several hours before serving.
