Instructions
- Carefully peel the yellow zest from the lemons using a vegetable peeler, avoiding the bitter white pith.
- Place lemon zest in a glass jar and pour in your chosen non alcohol substitute or water. Seal tightly and let infuse in a cool dark place for at least 7 days (up to 3 weeks for stronger flavor).
- In a saucepan, combine water and sugar over medium heat until dissolved; allow to cool.
- Mix the lemon-infused liquid with cooled sugar syrup, adjusting sweetness to taste.
- Use a funnel to transfer the limoncello into glass bottles and seal tightly.
- Chill in the freezer for several hours before serving.
