- 4 Boneless, Skinless Chicken Breasts (6–8 oz each)
- 1 cup All-Purpose Flour
- 2 Large Eggs
- 1 ½ cups Panko Breadcrumbs
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 4 slices Cooked Chicken
- 4–8 slices Swiss Cheese
- 3 tablespoons Olive Oil or Vegetable Oil
- ½ cup Mayonnaise
- 3 tablespoons Dijon Mustard
- 1 tablespoon Honey
- 1 tablespoon Lemon Juice
- Pinch of Salt and Black Pepper
- 1–2 tablespoons Milk or Cream (optional)
Instructions
- Preheat your oven to 400°F (200°C). Pound the chicken breasts between plastic wrap until about ½ inch thick.
- Set up three shallow bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with panko breadcrumbs.
- Dredge each chicken breast in flour, dip in eggs, then coat in panko.
- For frying: Heat oil in a pan over medium-high heat and fry the breaded chicken for 3-4 minutes per side until golden brown. For baking: Place on a parchment-lined baking sheet and lightly spray with oil; bake for about 20-25 minutes.
- Once cooked, top each chicken breast with sliced chicken and cheese before serving.
