- 3–4 medium or 2 large ripe bananas
- 2 Tbsp brown sugar
- 1 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 cup unsalted butter
- 1/2 cup pure maple syrup
- 1/4 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease one 9×5 loaf pan or two 8×4 pans and line with parchment paper.
- In a small bowl, mash bananas and mix with brown sugar, vanilla extract, and ground cinnamon.
- In a large bowl, cream softened butter and sugar until light and fluffy.
- Beat in eggs until fully incorporated.
- Sift together flour, baking soda, and salt; stir into the butter mixture until just combined.
- Gently fold in the banana mixture until well mixed.
- Pour batter into prepared pan(s) and bake at 350°F for 35-40 minutes or until a cake tester comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack.
