- 1 head cauliflower
- 1/2 cup olive oil
- 1/4 cup red apple vinegar
- 1 tsp Dijon mustard
- 1/4 tsp garlic powder
- 1 Tbsp Italian seasoning
- 1 red bell pepper
- 1/3 cup diced red onion
- 2 Tbsp chopped fresh parsley
- 1/4 tsp freshly cracked black pepper
- 1/2 tsp salt
- 2 Tbsp grated Parmesan
- 1 2.25oz. can sliced black olives
- 1/2 12oz. jar banana pepper rings
Instructions
- To prepare the dressing, combine olive oil, red apple vinegar, Dijon mustard, garlic powder, Italian seasoning, salt, black pepper, and grated Parmesan in a jar or bowl. Whisk or shake until well combined.
- Chop the cauliflower into small florets. In a large mixing bowl, combine chopped cauliflower with sliced black olives, banana pepper rings, diced red bell pepper, diced red onion, and chopped parsley.
- Pour the dressing over the salad mixture and toss gently until all ingredients are evenly coated.
- Refrigerate for at least 30 minutes before serving to enhance flavors. Stir before serving.
