- 2 cups cooked and shredded organic chicken
- 1 Tbsp extra virgin olive oil
- 2 Tbsps unsalted butter
- 4 garlic cloves, minced
- 4 cups organic chicken stock
- 1 (16 oz.) package potato gnocchi
- 5–6 organic sundried tomatoes
- 1 Tbsp tomato paste, organic
- 1 1/2 cups organic heavy cream
- 3 Tbsps organic all-purpose flour
- 1 1/2 Tbsps Tuscan Marry Me blend
- 1 tsp sea salt
- 3 Tbsps cooking apple vinegar (or substitute with chicken stock)
- 1/2 lemon, freshly-squeezed
- 1 cup chopped organic kale
- 1 cup freshly-grated parmesan
Instructions
- In a large pot over medium heat, combine olive oil and butter. Add garlic and sauté for about 2 minutes until fragrant.
- Stir in shredded chicken, chicken stock, sundried tomatoes, tomato paste, salt, Tuscan spices, and cooking apple vinegar. Bring to a simmer.
- In a small bowl, whisk flour with water until smooth; add to the pot while stirring continuously for about 5 minutes until slightly thickened.
- Pour in heavy cream and let simmer for another 5 minutes.
- Add gnocchi and kale; cook according to package instructions until tender.
- Serve hot with fresh lemon juice and top with parmesan.
