Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 3 tbsp extra virgin olive oil
- 2 medium zucchinis
- 2 red bell peppers
- 1 large red onion
- 2 cups cherry tomatoes
- 1 cup kalamata olives
- 4 cloves garlic
- 2 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- Juice of 1 lemon
- 0.5 cup crumbled feta cheese
Instructions
- Prep all ingredients: wash and chop vegetables.
- In a large skillet over medium heat, add 2 tablespoons of olive oil and cook the seasoned chicken until golden brown (6-8 minutes). Remove from skillet.
- In the same skillet, sauté onions until translucent, then add garlic, zucchini, bell peppers, cherry tomatoes, and olives; cook until tender (5-6 minutes).
- Return chicken to the skillet and add dried herbs; toss to combine.
- Finish with lemon juice and fold in crumbled feta cheese before serving hot.
