- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
Instructions
- Preheat your oven to 400°F (200°C). Place chicken breasts on a parchment-lined baking sheet. Drizzle with olive oil, salt, and pepper; rub in the seasonings.
- Bake for 25-30 minutes until cooked through. Let the chicken rest before chopping into bite-sized pieces.
- In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper to make the tzatziki sauce.
- Chop cherry tomatoes and slice red onion while chicken cools.
- In a large bowl, mix chopped chicken with vegetables and add tzatziki sauce; stir until well combined.
- Serve immediately or chill briefly before serving.
