- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper (red or yellow), diced
- 1 small zucchini, diced
- ½ cup cherry tomatoes, halved
- ¼ cup kalamata olives, sliced
- 2 tbsp fresh parsley, chopped
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ¼ tsp red pepper flakes (optional, for heat)
- 1 tbsp fresh lemon juice
- ¼ cup crumbled feta cheese
- ¼ cup toasted pine nuts
- ½ tsp sumac (optional, for extra tang)
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped onion for 2–3 minutes until soft, then add minced garlic and cook for 30 seconds.
- Add ground beef, breaking it up with a wooden spoon. Season with salt, black pepper, cumin, smoked paprika, oregano, and red pepper flakes. Cook for 5–7 minutes until browned.
- Stir in diced bell pepper and zucchini; cook for about 5 minutes until slightly tender. Add cherry tomatoes and kalamata olives; stir and cook for an additional 2 minutes.
- Remove from heat and mix in fresh parsley and lemon juice before serving. Top with crumbled feta cheese and toasted pine nuts if desired.
