- 2 cups chicken or vegetable broth
- 1 teaspoon turmeric

- 3 tablespoons parsley (chopped)
- Zest of 1 lemon
- 3–4 tablespoons lemon juice
Instructions
- Heat olive oil in a large saucepan over medium heat. Add diced onion and cook for about 2 minutes until softened. Stir in minced garlic and cook for an additional 2 minutes until fragrant.
- Add turmeric and salt, stirring to combine.
- Incorporate the rice into the saucepan, stirring until grains turn translucent.
- Pour in the broth and water, cover, and bring to a simmer. Reduce heat to low.
- Cook for approximately 12 minutes or until liquid is absorbed.
- Remove from heat and let rest covered for 10 minutes.
- Fluff the rice with a fork and stir in lemon zest, lemon juice, and chopped parsley before serving.
