- 5 cups frozen corn
- 1/3 cup mayonnaise
- 2/3 cup sour cream
- 1 cup Monterey Jack cheese
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- Juice of 1 lime
- 1/4 cup cilantro
- 1/4 cup feta cheese
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9 x 13 casserole dish.
- In a large mixing bowl, combine frozen corn, mayonnaise, sour cream, chili powder (reserve some for garnish), garlic powder, salt, lime juice, and Monterey Jack cheese. Mix until well blended.
- Pour the mixture into the prepared casserole dish and bake for 30-35 minutes or until bubbly and golden brown.
- Remove from oven and sprinkle crumbled feta cheese and chopped cilantro on top before serving.
