- 4 medium zucchinis

- 1 bell pepper
- 1 sweet onion
- 2 garlic cloves
- 2 tbsp taco seasoning

- Salsa (mild or medium)
Instructions
- Preheat oven to 400°F.
- Slice zucchinis in half lengthwise and scoop out seeds, reserving flesh.
- Drizzle olive oil inside the zucchini halves; season with salt.
- Bake zucchini shells cut-side down for 10 minutes.
- Sauté diced bell pepper and onion in olive oil until translucent; add reserved zucchini flesh and garlic.
- Brown ground meat; mix in taco seasoning, salsa, and cheese.
- Fill baked zucchini boats with the meat mixture; top with remaining cheese.
- Return to oven for an additional 10-15 minutes until cheese is melted.
