  • 1 package thawed puff pastry

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the beef with salt and pepper and sear for 2-3 minutes on each side until browned. Remove from heat and let cool.
  2. In the same skillet, add mushrooms, shallots, and garlic. Cook until golden brown, about 5-7 minutes. Stir in thyme and season with salt and pepper; allow to cool.
  3. Roll out puff pastry on a floured surface to about 1/8 inch thick and cut into 3×3-inch squares.
  4. Place a spoonful of mushroom duxelles on each square, followed by a piece of seared beef. Fold over the pastry to enclose the filling and seal edges with a fork.
  5. Preheat oven to 400°F (200°C). Place bites on a baking sheet, brush with beaten egg, and bake for 15-20 minutes until golden brown.
