- 4 large eggs
- 1 teaspoon white sugar
- 2 teaspoons white miso paste
- 2 teaspoons water
- 2 teaspoons toasted sesame oil
- pinch shichimi togarashi (optional)
Instructions
- Crack the eggs into a medium mixing bowl and whisk in the sugar until smooth.
- In another bowl, combine miso paste with water until well mixed, then add to the eggs and stir.
- Heat toasted sesame oil in a cold nonstick frying pan over low heat, then pour in the egg mixture.
- Gently stir with a silicone spatula while cooking, allowing the edges to set before folding towards the center.
- Cook for about 4 minutes until nearly fully cooked, then serve immediately.
