- 8 small-to-medium fresh strawberries (hulled and dry)
- 1 cup sweet red bean paste or whipped vanilla cream
- ½ cup potato starch or cornstarch (for dusting)
Instructions
- Wash, hull, and dry strawberries completely.
- Coat each berry in sweet red bean paste or whipped cream; chill briefly to firm up.
- Mix rice flour, sugar, salt, and water until smooth; microwave for 2½–3½ minutes until glossy.
- Cool dough on a starch-dusted surface; divide into 8 equal pieces.
- Flatten each piece into circles; wrap each strawberry and seal by pinching the dough.
- Allow mochi to rest for 10 minutes before serving.
