- 1 lb ground chicken
- 2 mozzarella cheese cubes (1/2" each)
- 1/2 red onion, grated
- 2 tbsp fresh parsley, finely chopped
- 1 clove garlic, minced
- Juice of 1/2 lemon
- 1/2 tbsp freeze-dried basil
- 1/2 tbsp oregano
- 1/4 cup grated Parmesan cheese
- 1/4 tsp coarse sea salt
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper flakes
Instructions
- Preheat your oven to 400°F.
- In a large mixing bowl, combine all ingredients except for the mozzarella cheese cubes. Mix until well combined.
- Scoop about 1½ tablespoons of the mixture and press a cheese cube into the center. Mold the mixture around it completely.
- Place the meatballs on a baking sheet lined with stoneware, spaced about two inches apart.
- Bake for 15 minutes, flip each meatball, and bake for an additional 15 minutes until fully cooked through.
