- 3/4 cup softened butter
- 1 and 1/2 cups packed brown sugar

- 2 and 3/4 cups old fashioned rolled oats (1 cup whole, 1 and 1/4 cup blended)
- 2 and 1/2 cups semisweet chocolate chips
Instructions
- Preheat oven to 325°F and line two baking sheets with parchment paper.
- In a mixing bowl or stand mixer, cream together the softened butter and brown sugar until fluffy. Add the egg, egg yolk, and vanilla; mix well.
- In a separate bowl, combine flour, baking soda, baking powder, and salt then add to wet ingredients without mixing yet.
- Begin mixing on low speed until partially combined, then stir in whole rolled oats.
- Blend the additional rolled oats into a coarse flour consistency using a blender or food processor; fold this into the dough.
- Finally, gently incorporate chocolate chips until evenly distributed.
- Scoop dough onto prepared sheets, leaving space between each cookie.
- Bake for about 9-10 minutes until edges are firm but centers are slightly shiny.
- Let cool on the pan for several minutes before transferring to wire racks.
