  • Total Time: 25 minutes
  • Yield: About 24 cookies 1x

Ingredients

Scale
  • 3/4 cup softened butter
  • 1 and 1/2 cups packed brown sugar
  • 1 large egg + 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 2 and 3/4 cups old fashioned rolled oats (1 cup whole, 1 and 1/4 cup blended)
  • 2 and 1/2 cups semisweet chocolate chips

Instructions

  1. Preheat oven to 325°F and line two baking sheets with parchment paper.
  2. In a mixing bowl or stand mixer, cream together the softened butter and brown sugar until fluffy. Add the egg, egg yolk, and vanilla; mix well.
  3. In a separate bowl, combine flour, baking soda, baking powder, and salt then add to wet ingredients without mixing yet.
  4. Begin mixing on low speed until partially combined, then stir in whole rolled oats.
  5. Blend the additional rolled oats into a coarse flour consistency using a blender or food processor; fold this into the dough.
  6. Finally, gently incorporate chocolate chips until evenly distributed.
  7. Scoop dough onto prepared sheets, leaving space between each cookie.
  8. Bake for about 9-10 minutes until edges are firm but centers are slightly shiny.
  9. Let cool on the pan for several minutes before transferring to wire racks.
