Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 loaf pan or line it with parchment paper.
- In a blender, combine the quartered orange (seeds removed), eggs, olive oil, sugar, sour cream, and vanilla extract. Blend until smooth.
- Add the flour, baking powder, and salt to the blender. Pulse until just combined; avoid overmixing.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
