  • 80 g dark brown sugar
  • 70 g butter
  • 250 g digestive or graham crackers
  • 2 tbsp granulated sugar
  • 75 g butter
  • 800 g full fat cream cheese (room temperature)
  • 250 g granulated sugar
  • 200 g sour cream (room temperature)
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract
  • 4 large eggs

Instructions

  1. Prepare the peaches by washing and slicing them. Mix with granulated sugar and cinnamon; set aside.
  2. In a bowl, combine flour, dark brown sugar, and butter for the crumble topping until crumbly; set aside.
  3. Crush digestive or graham crackers and mix with sugar and melted butter; press into a springform pan.
  4. Beat cream cheese with sugar until smooth; add sour cream, cornstarch, vanilla, and eggs one at a time.
  5. Layer half of the cheesecake mixture over the crust, followed by half of the peach mixture. Repeat layers and top with crumble.
  6. Bake at 325°F (160°C) for about 105 minutes until set. Let cool before refrigerating for at least four hours.
