- 4 fresh peaches
- 1 tablespoon, plus 2 teaspoons lemon juice
- 2 tablespoons cold water
- 1 tablespoon, plus 2 teaspoons unflavored vegan gelatin powder
- 4 tablespoons pure maple syrup (or any sweetener of choice)
- 1 cup heavy cream
Instructions
- Prepare your vanilla cake according to recipe instructions and allow it to cool.
- Cube three peaches and blend with lemon juice and maple syrup until smooth.
- Bloom the vegan gelatin in cold water; heat briefly until liquefied, then mix into the peach puree.
- Chill the mixture until slightly thickened.
- Whip heavy cream until stiff peaks form; divide into two bowls.
- Fold half of the whipped cream into the peach mousse mixture and sweeten the other half if desired.
- In serving glasses, layer mousse, cake pieces or cubes, whipped cream, and sliced peaches.
- Chill trifles for at least three hours before serving.
