  • 1/2 to 2/3 cups chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. In a mixing bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream together softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Gradually combine the dry ingredients with the wet mixture in three additions, alternating with sour cream until just combined.
  5. Gently fold in mashed bananas and chopped nuts if desired.
  6. Spread batter into the loaf pan and bake for 50 to 55 minutes or until a toothpick comes out clean.
