- 1 3/4 cups all-purpose flour

- 1/2 cup creamy peanut butter
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 1/2 cups mashed banana (about 3 or 4 medium overripe bananas)
- 1/2 to 2/3 cups chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
- In a mixing bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt. Set aside.
- In another bowl, cream together softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla extract.
- Gradually combine the dry ingredients with the wet mixture in three additions, alternating with sour cream until just combined.
- Gently fold in mashed bananas and chopped nuts if desired.
- Spread batter into the loaf pan and bake for 50 to 55 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
