Ingredients
- 1 lb. ground chicken or turkey
- 4 tablespoons soy sauce
- 3 tablespoons oyster sauce
- 2 tablespoons sesame oil
- ½ cup chopped peanuts
- 12 lettuce leaves (Boston lettuce recommended)
- Fresh ginger
- Garlic
- Green onions
- Limes
Instructions
- In a bowl, whisk together soy sauce, oyster sauce, lime juice, ginger, garlic, green onions, honey, sambal oelek, rice vinegar, and cornstarch.
- Marinate ground chicken with chopped peanuts in half of the sauce for 15 minutes.
- Soak rice noodles in warm water until softened; drain.
- Heat sesame oil in a skillet; sauté marinated chicken until cooked through (about 10 minutes). Add soaked noodles and stir-fry for an additional 5 minutes.
- Assemble by scooping the mixture into lettuce leaves and drizzle with remaining sauce.
