Instructions
- In a small bowl, mix the sauce ingredients until smooth.
- Cut the bell pepper and onion into bite-sized pieces.
- Dice chicken into 1-inch pieces; season with garlic powder, pepper, and cornstarch.
- Heat 2 tablespoons olive oil in a deep skillet over medium-high heat. Cook chicken in batches until browned and cooked through (about 8 minutes total).
- Sauté drained pineapple for one minute; add bell pepper and onion, cooking until tender-crisp (about 3 minutes).
- Return chicken to the pan; pour in the sauce mixture and simmer until thickened (1-2 minutes). Serve immediately.
