- 1 cup (130g) pistachios, roughly chopped
- 8 oz (227g) white chocolate, finely chopped
- ½ cup (120g) heavy cream
- 3 tablespoons pistachio paste
- 1 pinch salt
- ½ teaspoon almond extract (optional)
Instructions
- Preheat oven to 335°F (170°C). Line a 9-inch baking pan with parchment paper.
- In a mixing bowl, whisk eggs and sugar until pale. Melt butter and dark chocolate in bursts until smooth; combine with egg mixture.
- Stir in extracts, then sift in flour and salt. Gently fold in chopped pistachios.
- Pour batter into the pan and bake for 20-25 minutes; check for moist crumbs with a skewer.
- Allow brownies to cool completely before preparing ganache.
- Warm cream, pour over chopped white chocolate, let sit, then stir until smooth. Mix in pistachio paste.
- Once cooled, spread ganache over brownies.
